Indonesian Beef and Tempeh Skewers with Peanut Sauce

Sate Sapi dan Sate Tempe Recipe


Ingredients

For the Skewers:

  • 1/2 kg beef, cut into cubes
  • 1 block of tempeh
  • 10 sausages
  • 2 sachets sweet soy sauce (kecap manis)
  • 1/2 tsp ground pepper
  • 10 cloves garlic
  • 1 tsp fine salt
  • 1 sachet beef bouillon powder
  • 9 shallots, thinly sliced

For the Peanut Sauce:

  • 1/2 cup peanuts
  • 2 bay leaves
  • 3 kaffir lime leaves, veins removed
  • 1 medium-sized piece of palm sugar
  • 7 cloves garlic
  • 5 shallots
  • Water
  • 1 sachet sweet soy sauce (kecap manis)
  • Salt

Instructions

Preparing the Beef and Tempeh:

  1. Tenderizing the Beef:

    • Begin by tenderizing the beef cubes using a pestle or meat tenderizer. Avoid washing the beef as it can become tough. The beef has been stored in the freezer for about two weeks, with the fibers and fat removed beforehand.
  2. Marinating:

    • Create a marinade by blending garlic, ground pepper, beef bouillon powder, and salt. Place this mixture in a large tray and add water to taste. Submerge the beef cubes in the marinade and let them soak for approximately 30 minutes to absorb the flavors.
  3. Skewering:

    • Thread the marinated beef cubes onto skewers. Similarly, marinate the tempeh and sausages in the same mixture and thread them onto skewers as well.

Grilling the Skewers:

    • Prepare the grill and start cooking the skewers, turning them frequently to ensure even cooking. Occasionally, brush the skewers with sweet soy sauce using a basting brush. This includes both the tempeh and sausage skewers.

Making the Peanut Sauce:

  1. Frying and Blending:

    • Fry the peanuts until golden brown. In a blender, combine garlic, kaffir lime leaves, and the fried peanuts. Blend until smooth. Add palm sugar and salt to the mixture.
  2. Cooking the Sauce:

    • Transfer the blended mixture to a saucepan and add three cups of water. Pour in the sweet soy sauce and stir the mixture until it thickens. Adjust the seasoning to taste.

Serving:

  1. Final Touch:
    • Arrange the grilled skewers on a serving plate and drizzle generously with the peanut sauce. Garnish with thinly sliced shallots for added flavor and texture.
