Sop Daging Sapi (Beef Soup)

Ingredients:

  • 1/4 kg beef
  • 1/2 cauliflower
  • 2 carrots
  • 2 potatoes
  • 6 cabbage leaves
  • 1/4 head of cabbage
  • 2 tomatoes
  • 2 stalks of green onions
  • 1 bunch of celery

Seasoning:

  • 6 cloves of shallots
  • 5 cloves of garlic
  • 1 nutmeg
  • 6 cardamom pods
  • 1 piece of ginger
  • Salt
  • Pepper
  • Cooking oil as needed
  • Water as needed

Steps:

  1. Preparation of Beef:

    • Thoroughly wash the beef and boil it until it is completely tender. Once cooked, set aside and cut into small pieces if desired.
  2. Vegetable Preparation:

    • Clean all the vegetables thoroughly and cut them into bite-sized pieces.
  3. Spice Preparation:

    • Blend or finely chop the shallots and garlic. While chopping is fine, blending them can bring out a richer flavor.
  4. Cooking the Spices:

    • Heat a bit of cooking oil in a pot. Sauté the blended shallots and garlic until fragrant.
    • Add the ginger, cardamom pods, and nutmeg to the pot, continuing to sauté until the aroma is released.
  5. Adding Vegetables:

    • Add the hard vegetables first, such as carrots and potatoes, to the pot. Sauté them until they start to soften.
    • Follow with the cauliflower and sauté until it begins to wilt slightly. Then, add the cabbage leaves and quartered cabbage, stirring everything together.
  6. Combining Ingredients:

    • Introduce the pre-cooked beef into the pot with the vegetables. Pour in enough water to cover all the ingredients.
    • Season with salt and pepper to taste.
  7. Finishing Touches:

    • Just before the soup is done, add the chopped tomatoes, green onions, and celery. Allow the soup to simmer for a few more minutes until the tomatoes are softened and the green onions and celery are cooked through.
  8. Final Adjustments:

    • Taste the soup and adjust the seasoning as necessary. Once all the ingredients are tender and the flavors are well-blended, remove the pot from heat.
  9. Serving:

    • Serve the soup hot, ensuring each bowl has a generous portion of beef and vegetables.
