Ingredients:

  • 5 shallots
  • 5 cloves garlic
  • 3 large red chilies
  • 5 small red chilies (adjust to taste, omit if you prefer less heat)
  • 2 candlenuts
  • 2 kaffir lime leaves
  • 1 stalk lemongrass (crushed)
  • 2 bay leaves
  • Palm sugar (to taste)
  • Flavor enhancer (optional)
  • 2 tablespoons lime juice
  • 1 packet ground black pepper

Instructions:

  1. Prepare the Beef: Begin by cooking the beef. You can use a pressure cooker for this step; cook the beef for about 25 minutes until tender.

  2. Blend the Spices: While the beef is cooking, blend the shallots, garlic, red chilies, small red chilies, and candlenuts into a smooth paste.

  3. Cook the Spices: Heat some oil in a pan over medium heat. Add the blended spice paste along with the crushed lemongrass and bay leaves. Sauté until the spices become aromatic.
