Galantin Daging Sapi

Ingredients:

  • 1 kg beef, finely ground
  • 640 g white bread, crusts removed
  • 9 chicken eggs
  • 350 ml ice water
  • 2 large onions
  • 1 tsp mushroom stock
  • Banana leaves (for wrapping)

For the spice mix:

  • 10 cloves garlic
  • 1 tsp black pepper
  • 2 tbsp salt
  • 1 whole nutmeg

Instructions:

  1. Prepare the Ingredients: Begin by finely grinding the beef and setting it aside. Tear the white bread into pieces and soak it briefly in a little bit of the ice water to soften. Peel and finely chop the garlic and onions, and grate the nutmeg.

  2. Mix the Ingredients: In a large mixing bowl, combine the ground beef, softened bread, eggs, remaining ice water, mushroom stock, and spice mix. Blend these ingredients until fully combined. For a smoother texture, use a meat grinder or a high-power blender to ensure everything is evenly mixed.

  3. Blend for Smoothness: To achieve the finest texture, blend the mixture along with the chopped onions until completely smooth. This step ensures a refined and tender galantin.

  4. Wrap and Steam: Lay out the banana leaves on a flat surface. Place the blended mixture onto the center of the leaves and fold them over to encase the mixture securely. Tie the banana leaves with kitchen twine to ensure the galantin holds its shape during steaming.

  5. Steam the Galantin: Set up a steamer and place the wrapped galantin inside. Steam for approximately 30 minutes, or until the mixture is fully cooked and firm to the touch.

  6. Cool and Store: Once cooked, remove the galantin from the steamer and allow it to cool completely. If you wish to store it for later use, keep it wrapped in banana leaves and place it in the freezer. This method will help preserve its flavor and texture.
