Indonesian Beef Intestine Stew with Egg and Tofu Filling (Semur Tambusu)

Semur Tambusu (Stuffed Beef Intestine with Egg and Tofu) ala Kudus

Ingredients:

  • For the Filling:

    • 500 grams beef intestine (iso sapi)
    • 4 chicken eggs (duck eggs are preferable for a richer taste)
    • 1 block of white tofu
    • 4 cloves shallots
    • 2 cloves garlic
    • 1 teaspoon instant broth powder
    • Salt, to taste
    • 1 liter water (for boiling the beef intestine)
  • For the Semur (Stew) Sauce:

    • 3 cloves garlic
    • 4 candlenuts (kemiri)
    • 1 tablespoon fried shallots
    • 1/2 teaspoon whole peppercorns (ground pepper can be used, but whole peppercorns are preferable)
    • 2 red chilies
    • 1/2 tablespoon palm sugar
    • Sweet soy sauce, to taste
    • Salt, to taste
    • 2 cm galangal (laos), bruised
    • 1 cm ginger, bruised
    • A pinch of roasted shrimp paste (terasi)
    • 200 ml coconut milk (use 1 pack of instant coconut milk mixed with water)

Preparation Steps:

  1. Prepare the Filling:

    • Sauté the spices (shallots, garlic) in a little oil until fragrant, then grind them finely.
    • Crack the eggs into a bowl, beat them lightly, and mix in the ground spices.
    • Crush the tofu until smooth and combine it with the beaten eggs.
    • Take the beef intestine and tie one end securely. Stuff the intestine with the egg and tofu mixture, leaving about 5 cm of space to prevent it from bursting during boiling.
    • Bring a pot of water to a boil, add salt, and then immerse the stuffed beef intestine. Boil for 2 minutes, then remove and drain.
  2. Prepare the Semur Sauce:

    • Grind garlic, peppercorns, candlenuts, and shrimp paste into a fine paste.
    • In a pan, sauté this spice paste in a little oil until fragrant. Add bruised galangal and ginger, and continue to sauté.
    • Pour in a bit of the coconut milk along with palm sugar, sweet soy sauce, and salt. Bring to a boil.
    • Add the stuffed beef intestine whole (do not cut it) into the simmering sauce.
    • Once the spices have been absorbed, pour in the remaining coconut milk and simmer until it comes to a boil again. Taste and adjust the seasoning as needed.
  3. Serving Suggestions:

    • Serve the Semur Tambusu hot with steamed rice or lontong (rice cakes).
    • For added variety, you can include fried tofu and tempeh in the semur.
