Rawon Daging Sapi Recipe: A Traditional Indonesian Beef Soup

Ingredients:

Spice Blend:

  • 13 shallots
  • 7 cloves of garlic
  • 2/3 nutmeg
  • 3 keluak nuts (crack open and soak in hot water until soft)
  • Black pepper to taste
  • Nutmeg to taste
  • Coriander to taste
  • Ginger to taste
  • Turmeric to taste

Cooking Ingredients:

  • 2 stalks lemongrass (bruised)
  • Salt to taste
  • Sugar to taste
  • Beef seasoning (such as Maggi beef flavor or Royco beef seasoning)
  • Beef (cut into chunks)

Garnishes:

  • Sliced scallions
  • Fried shallots
  • Bean sprouts
  • Lime wedges
  • Sambal korek (chili sauce)
  • Galangal (bruised)
  • 5 kaffir lime leaves (bruised)

Steps:

  1. Prepare the Beef: Begin by boiling the beef chunks until they are tender. This process ensures that the beef becomes soft and flavorful.

  2. Blend the Spice Mix: In a blender or using a mortar and pestle, blend or grind the shallots, garlic, nutmeg, keluak nuts, black pepper, nutmeg, coriander, ginger, and turmeric into a smooth paste. Note: Before blending, crack open the keluak nuts, scoop out the flesh, and soak it in hot water until it becomes soft.

  3. Cook the Spice Blend: Heat some oil in a pan and add the spice paste. Sauté the mixture until it becomes aromatic and slightly dry. Add a little more oil if needed during this process.

  4. Combine Ingredients: Once the spice paste is ready, add it to the boiling beef. Stir well to ensure the spices are evenly distributed. Allow it to cook until the soup thickens and the flavors meld together.

  5. Season the Soup: Add salt, sugar, and beef seasoning to taste. Incorporate the bruised lemongrass, galangal, and kaffir lime leaves into the soup.

  6. Adjust Seasonings: Taste the soup and adjust the seasoning if necessary. Add more salt or sugar according to your preference.

  7. Final Touches: Slice the scallions and prepare lime wedges for serving.

  8. Serve: Ladle the hot soup into bowls and garnish with sliced scallions, fried shallots, and bean sprouts. Serve with lime wedges and sambal korek on the side for an extra kick.

Enjoy your homemade Rawon Daging Sapi, a rich and aromatic Indonesian beef soup that’s perfect for a comforting meal!
