Rendang Daging Sapi Kentang: A Rich and Flavorful Indonesian Beef Stew

Ingredients:

  • 750 grams beef, cut into chunks
  • 1000 ml thin coconut milk
  • 1000 ml thick coconut milk
  • 5 kaffir lime leaves
  • 1 stalk lemongrass, smashed
  • 4 potatoes, peeled and cut into chunks

For the Spice Paste:

  • 100 grams red chilies
  • 2 cm turmeric
  • 12 shallots
  • 5 cloves garlic
  • 2 cm galangal
  • Salt and sugar to taste

Instructions:

  1. Prepare the Spice Paste:
    Begin by making the spice paste. In a blender or food processor, combine the red chilies, turmeric, shallots, garlic, and galangal. Blend until smooth to create a rich, aromatic paste.

  2. Cook the Coconut Milk and Spices:
    In a large pot, add the thin coconut milk, kaffir lime leaves, lemongrass, and the freshly made spice paste. Bring to a boil over medium heat, stirring occasionally to ensure the paste is well incorporated.

  3. Add the Beef:
    Once the mixture reaches a boil, add the beef chunks to the pot. Season with salt and sugar to taste. Reduce the heat to low and simmer, allowing the beef to cook slowly in the coconut milk. Continue cooking until the liquid reduces and thickens slightly.

  4. Incorporate the Thick Coconut Milk:
    Once the beef is tender and the coconut milk has thickened, pour in the thick coconut milk. Stir well and continue to simmer gently. As the mixture cooks, it will start to reduce further and become richer.

  5. Add the Potatoes:
    When the thick coconut milk has reduced by about half, add the potato chunks. Stir to combine, and cook until the potatoes are tender and the rendang has thickened to your desired consistency. The dish should become slightly oily and have a deep, rich flavor.

  6. Finish and Serve:
    Once the rendang is well-cooked and has reached a desirable consistency, remove it from the heat. Serve the Rendang Daging Sapi Kentang hot, garnished with additional kaffir lime leaves if desired. Enjoy this delicious Indonesian beef stew with steamed rice or as part of a larger meal.
