Sop Iga Sapi: A Savory Indonesian Beef Rib Soup

Discover the rich, comforting flavors of Sop Iga Sapi, a classic Indonesian beef rib soup that is perfect for warming up on a chilly day. This recipe features tender beef ribs simmered to perfection with hearty vegetables and aromatic spices. Ideal for a family meal, this dish combines savory beef with fresh, vibrant ingredients, creating a bowl of soup that’s both satisfying and full of flavor. Here’s how you can recreate this beloved Indonesian favorite at home:

Ingredients

  • 500 grams (1/2 kg) beef ribs, cleaned
  • 2 potatoes, cut into cubes
  • 2 carrots, cut into chunks
  • 1 stalk green onion, sliced
  • 1 stalk celery, sliced

For the Spice Paste:

  • 6 shallots

  • 4 garlic cloves

  • 1/2 teaspoon ground black pepper (adjust to taste; use less if serving to children)

  • 1/2 teaspoon ground nutmeg

  • A small piece of ginger, smashed

  • Salt, sugar, and beef bouillon powder (Royco), to taste

  • Fried shallots and garlic for garnish

Instructions

  1. Prepare the Beef Ribs: In a large pot, bring water to a boil and add the cleaned beef ribs. Boil for a few minutes to remove impurities. For a quicker method, use a pressure cooker and cook the ribs for about 15 minutes. Strain the broth and set it aside.

  2. Cook the Vegetables: In a separate pot, bring fresh water to a boil. Add the cubed potatoes and carrot chunks, cooking them until they are tender but not mushy.

  3. Make the Spice Paste: While the vegetables are cooking, blend the shallots and garlic into a smooth paste. Heat a little oil in a pan and sauté the spice paste until it becomes fragrant.

  4. Combine Ingredients: Add the sautéed spice paste to the pot with the boiling potatoes and carrots. Incorporate the beef ribs and the reserved broth. Stir in sugar, salt, and a small amount of beef bouillon powder (Royco) to taste.

  5. Simmer and Flavor: Add the sliced green onion and celery to the pot. Allow the soup to simmer for a few minutes until all ingredients are well-cooked and the flavors meld together.

  6. Finish and Serve: Taste and adjust seasoning if necessary. Garnish the soup with fried shallots and garlic for an added crunch and depth of flavor.

Serve the Sop Iga Sapi hot and enjoy the comforting, savory taste of this traditional Indonesian dish. Perfect for family dinners or special gatherings, this soup is sure to delight everyone at the table.
