Tetelan Sapi (Indonesian Beef Ribs Stew) Recipe

This delightful Indonesian beef ribs stew, known as Tetelan Sapi, is a hearty and flavorful dish that combines tender beef ribs with a medley of aromatic spices and seasonings. Perfect for a comforting meal, this recipe is simple yet packed with flavor. Here’s how to make it:

Ingredients:

  • Beef Ribs: 500 grams, pre-boiled or raw
  • Shallots: 5 cloves
  • Garlic: 3 cloves
  • Bird’s Eye Chili: 10 pieces (adjust according to your heat preference)
  • Bay Leaves: 2 leaves
  • Galangal: 1-inch piece, smashed
  • Onion: 1/2, thinly sliced
  • Cooking Oil: 2 tablespoons
  • Sweet Soy Sauce (Kecap Manis): 2 tablespoons
  • Soy Sauce: 1 tablespoon
  • Pepper: 1 teaspoon
  • Saori Seasoning: 1 tablespoon
  • Salt: to taste
  • Sugar: to taste
  • Flavor Enhancer (Penyedap): to taste

Instructions:

  1. Prepare the Spice Paste: In a blender or food processor, combine the shallots, garlic, bird’s eye chili, salt, sugar, and flavor enhancer. Blend until the mixture forms a smooth paste.

  2. Cook the Paste: Heat the cooking oil in a large pan over medium heat. Add the blended spice paste, bay leaves, and smashed galangal. Sauté the mixture until it becomes fragrant and starts to darken in color.

  3. Add the Beef Ribs: Add the pre-boiled beef ribs to the pan. Stir well to coat the ribs with the spice paste.

  4. Season the Dish: Pour in the sweet soy sauce, soy sauce, and sprinkle the pepper over the beef ribs. Add the thinly sliced onion to the pan.

  5. Simmer: Stir to combine all the ingredients. Let the stew simmer for about 15-20 minutes, allowing the flavors to meld together and the sauce to thicken.

  6. Adjust Seasonings: Taste the stew and adjust the seasoning with additional salt, sugar, or flavor enhancer as needed.

  7. Serve: Once the beef ribs are tender and the sauce has reduced to your desired consistency, remove the pan from the heat. Serve hot with steamed rice or your favorite side dishes.

Enjoy this flavorful and aromatic Tetelan Sapi as a satisfying meal for your family and friends!
