Rolade daging sapi (Galantin) Recipe

Discover a delectable Indonesian classic with this Rolade daging sapi, also known as Galantin, a savory rolled beef dish enriched with aromatic spices and a flavorful sauce. Perfect for special occasions or a satisfying family meal, this recipe combines tender beef with a rich sauce, accompanied by fresh vegetables. Here’s how to create this delightful dish:

Ingredients

For the Beef Roll:

  • 1/2 kg (500 grams) ground beef (preferably from the sirloin)
  • 4 cloves garlic
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons breadcrumbs
  • 2 large eggs

For the Sauce:

  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1 tomato, diced
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons finely ground palm sugar
  • 2 tablespoons soy sauce
  • 4 tablespoons tomato ketchup
  • 1 tablespoon chili sauce
  • 1 teaspoon oyster sauce
  • 2 tablespoons cornstarch mixed with water
  • 500 ml water

For the Accompaniments:

  • Carrots (boiled or steamed)
  • Green beans (boiled or steamed)
  • French fries

Instructions

  1. Prepare the Beef Roll:

    • Start by finely mincing the garlic and mixing it with the ground beef in a large bowl. Add the ground nutmeg, black pepper, salt, and breadcrumbs to the mixture.
    • Once well combined, incorporate the eggs into the beef mixture, stirring until evenly mixed.
    • Lay out a sheet of plastic wrap or aluminum foil on a flat surface. Place the beef mixture onto the wrap, shaping it into a log or cylinder.
    • Roll the beef mixture tightly, securing the ends of the plastic wrap or foil to form a compact roll. Steam the roll for approximately 40 minutes, or until fully cooked through.
    • Allow the beef roll to cool to room temperature. Once cooled, carefully unwrap and fry the roll in hot oil until it turns golden brown and crispy. Let it cool again, then slice into pieces as desired.
  2. Prepare the Sauce:

    • Heat a bit of oil in a pan over medium heat. Sauté the minced garlic and chopped onion until they become fragrant and translucent.
    • Add the oyster sauce, ground nutmeg, salt, finely ground palm sugar, soy sauce, and water to the pan. Stir to combine.
    • Incorporate the tomato ketchup and chili sauce, adjusting the seasoning to taste. Simmer the sauce for a few minutes to meld the flavors.
    • Add the diced tomato and the cornstarch mixture to thicken the sauce. Stir until the sauce reaches your desired consistency.
  3. Serve:

    • Arrange slices of the beef roll on a serving platter. Pour the sauce over the beef or serve it on the side for dipping.
    • Garnish with boiled or steamed carrots, green beans, and crispy French fries.

Enjoy this Rolade daging sapi with its flavorful sauce and a selection of fresh vegetables for a complete and satisfying meal. Whether for a festive occasion or a cozy dinner, this dish is sure to impress with its rich flavors and comforting appeal.
