Galantin Daging Sapi: A Savory Indonesian Beef Roll Recipe

Galantin daging sapi, a flavorful Indonesian beef roll, is a delightful dish that combines savory ground beef with a delicate outer layer, creating a deliciously unique taste experience. Perfect for gatherings or a special family meal, this recipe is both satisfying and versatile. Here’s how to prepare this enticing dish:

Ingredients:

For the Filling:

  • 500 grams (1.1 pounds) ground beef
  • Optional: grated vegetables (not used in this recipe)
  • Granulated sugar
  • 5-10 tablespoons breadcrumbs (for a stronger beef flavor, use less; can be substituted with white bread)
  • Salt
  • Garlic cloves, minced
  • Nutmeg powder (optional, can be omitted if unavailable)
  • 3 free-range chicken eggs
  • Beef stock powder, to taste
  • Black pepper

For the Outer Layer:

  • 2 tablespoons cornstarch
  • 2-3 free-range chicken eggs
  • Salt

Instructions:

  1. Prepare the Filling:

    • In a large bowl, combine the ground beef, breadcrumbs, salt, minced garlic, and black pepper. If using, add the grated vegetables and mix well.
    • Crack the eggs into the mixture and blend thoroughly until all ingredients are evenly incorporated.
    • Season with granulated sugar and beef stock powder to taste. Adjust seasoning as needed.
    • Set aside and allow the flavors to meld.
  2. Prepare the Outer Layer:

    • In a separate bowl, whisk together the eggs and cornstarch until smooth. Season with a pinch of salt.
    • Heat a non-stick skillet over medium heat and lightly grease with oil.
    • Pour a thin layer of the egg mixture into the skillet, creating a crepe-like layer. Cook until just set, then flip and cook the other side briefly. Repeat with the remaining mixture.
  3. Assemble the Galantin:

    • Place the cooked egg crepe on a flat surface. Spread the prepared beef filling evenly over the crepe, leaving a small border around the edges.
    • Gently roll the crepe around the beef filling to form a tight roll. Wrap the roll in plastic wrap, banana leaves, or aluminum foil to secure it.
  4. Cooking:

    • Steam the wrapped roll for 30 minutes. This step ensures the filling is fully cooked and the flavors meld together.
    • After steaming, remove the roll from the wrapping. At this stage, you can either fry the roll in hot oil until golden brown and crispy, or freeze it for future use.
  5. Serving:

    • Slice the galantin daging sapi into portions and serve warm. This dish pairs beautifully with steamed vegetables or a fresh salad.

Enjoy this Indonesian classic that brings a touch of exotic flavor to your dining table!
