Rolade Daging Sapi (Beef Rollade)

Ingredients:

For the Beef Rollade:

  • 500 grams ground beef
  • 50 grams sago flour (sagutani)
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon ground nutmeg
  • 2 egg whites
  • 2 cloves garlic, minced
  • 100 ml ice water

For the Egg Crepe:

  • 6 eggs
  • 6 tablespoons water
  • 1/2 teaspoon salt

Instructions:

Preparing the Beef Rollade:

  1. Combine Ingredients: In a large mixing bowl, combine the ground beef, sago flour, salt, ground pepper, ground nutmeg, egg whites, minced garlic, and ice water. Mix thoroughly until the ingredients are well-blended, forming a consistency similar to meatball mixture.

Preparing the Egg Crepes:

  1. Make Egg Crepes: In a separate bowl, whisk together the eggs, water, and salt until well combined. Heat a non-stick skillet over medium heat and pour a small amount of the egg mixture to form a thin crepe. Cook until the egg is set, then remove from the skillet. Repeat until all the egg mixture is used.

Assembling the Rollades:

  1. Spread Beef Mixture: Lay one egg crepe on a flat surface. Spread a portion of the beef mixture evenly over the crepe.
  2. Roll the Crepe: Carefully roll the egg crepe, encasing the beef mixture inside. Repeat the process with the remaining egg crepes and beef mixture.

Cooking the Rollades:

  1. Wrap and Steam: Wrap each rolled crepe in plastic wrap and tie the ends securely with kitchen string or rafia. Place the wrapped rolls in a steamer and steam for about 25 minutes, or until cooked through.
  2. Cool and Slice: Once steamed, remove the rolls from the steamer and let them cool slightly. Remove the plastic wrap and slice the rolls into desired thickness.

Final Touch:

  1. Fry the Slices: Heat oil in a frying pan over medium-high heat. Fry the sliced rollades until golden brown and crispy on all sides. Drain on paper towels to remove excess oil.
