Ingredients:
- 500 grams beef (cut into cubes)
- For the spice paste:
- 5 shallots
- 5 garlic cloves
- 1/2 tablespoon coriander seeds
- 1 piece ginger (about 1-inch)
- 1 piece galangal (about 1-inch)
- Brown sugar, to taste
- Salt, to taste
- 3 tablespoons tamarind water
- Sweet soy sauce, to taste
- For basting:
- Margarine
- Sweet soy sauce

- Clean the beef thoroughly. Wrap the pieces in banana leaves that have been washed and softened (you can also use plastic wrap if banana leaves aren’t available). Leave them wrapped for about 20 minutes to tenderize.

- In a blender or food processor, combine shallots, garlic, coriander seeds, ginger, and galangal. Blend until smooth.
- Mix in the brown sugar, salt, and tamarind water. Adjust the seasoning to taste.

Marinate the Beef:
- Cut the beef into bite-sized cubes. Soak the cubes in the spice paste, ensuring they are well-coated. Allow the beef to marinate for at least 30 minutes, or longer for a more intense flavor.

- While the beef is marinating, prepare your grill or BBQ pit. Preheat the grill and arrange the charcoal if you’re using a charcoal grill.

- Thread the marinated beef cubes onto skewers.
- Mix margarine with a bit of sweet soy sauce for basting.
- Brush the skewered beef with the margarine and soy sauce mixture.
- Grill the skewers over medium heat, turning occasionally, until the beef is cooked through and has a nice char. Baste with the margarine and soy sauce mixture as needed during grilling.
