Sop Sapi: Indonesian Beef Soup

Ingredients:

  • 250 grams beef shank, cut into cubes
  • 5 sheets cabbage leaves, chopped
  • 2 medium carrots, sliced
  • 2 stalks green onions, cut into longer pieces
  • 2 stalks celery, roughly chopped
  • 2 cloves shallots, thinly sliced and sautéed until softened
  • 2 cm cinnamon stick
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon black pepper
  • Salt, sugar, and beef or mushroom bouillon to taste
  • Fried shallots, for garnish

Instructions:

  1. Prepare Ingredients: Begin by preparing all the ingredients as described above.

  2. Boil the Beef: In a large pot, bring water to a boil. Add the beef cubes and cook for 5 minutes until the water becomes cloudy and foamy. Discard this water to remove impurities, then refill the pot with fresh water. Continue to simmer until the beef is tender.

  3. Add Vegetables and Seasonings: Once the beef is tender, add the sliced carrots and cinnamon stick to the pot. After 5 minutes, incorporate the chopped cabbage and the sautéed shallots. Season the soup with salt, sugar, black pepper, nutmeg, and bouillon. Stir well to combine.

  4. Adjust the Flavor: Taste the soup and adjust the seasoning as needed.

  5. Final Touches: Add the green onions and celery to the pot. Stir for a short time, then turn off the heat.

  6. Serve: Ladle the soup into bowls and garnish with fried shallots for added texture and flavor.
