Sate Sapi: A Flavorful Indonesian Beef Skewer Recipe

Sate Sapi, or Indonesian beef skewers, are a delicious and satisfying dish perfect for gatherings or a flavorful weeknight meal. The blend of spices and sweet soy sauce creates a delectable marinade that infuses the beef with a rich, aromatic flavor. Here’s how to prepare this traditional Indonesian treat from scratch.

Ingredients:

  • 500 grams beef (sirloin or tenderloin), cut into large cubes
  • 2 tablespoons margarine, melted
  • 15-20 skewers

Marinade:

  • 6 shallots
  • 5 cloves garlic
  • 3 candlenuts
  • 1/2 tablespoon coriander seeds, toasted
  • 1/2 tablespoon palm sugar
  • 6-8 tablespoons sweet soy sauce (kecap manis)
  • 1 teaspoon salt

To Serve:

  • Sliced shallots and bird’s eye chilies for garnish
  • Sambal kecap (sweet soy sauce sambal)
  • Steamed white rice

Instructions:

  1. Prepare the Beef:

    • Cut the beef into large cubes, ensuring to slice against the grain. This helps in keeping the beef tender after grilling.
  2. Make the Marinade:

    • In a blender or food processor, combine the shallots, garlic, candlenuts, toasted coriander seeds, salt, and palm sugar. Blend until you achieve a smooth paste.
    • Add the sweet soy sauce to the paste and blend again to mix well.
  3. Marinate the Beef:

    • Place the beef cubes in a large bowl or resealable plastic bag. Pour the marinade over the beef and mix thoroughly to coat all pieces evenly.
    • Cover the bowl or seal the bag and refrigerate the beef overnight. This allows the flavors to penetrate the meat, enhancing its taste.
  4. Prepare the Skewers:

    • The next day, thread the marinated beef cubes onto the skewers. Typically, each skewer will hold about 5 pieces of beef, but this may vary based on the size of the beef cubes and skewers.
    • You should end up with approximately 16 skewers, though this can vary based on the size of the beef chunks.
  5. Grill the Sate:

    • Prepare a charcoal grill or heat a grill pan over medium-high heat. If using a charcoal grill, allow the coals to reach a consistent, high heat.
    • Grill the skewers, basting occasionally with the melted margarine to keep them moist and add flavor.
    • Cook until the beef is browned and cooked through, about 5-7 minutes per side depending on the heat of your grill and the size of the beef cubes.
  6. Serve:

    • Arrange the grilled skewers on a serving plate. Serve with steamed white rice, garnished with sliced shallots and bird’s eye chilies.
    • Accompany the dish with sambal kecap and, if desired, some Tempe Oblok-Oblok for a traditional touch.
