Sate Goreng Sapi: Savory Indonesian Beef Skewers

Ingredients:

  • 250 grams beef (cut into cubes)

For the Spice Paste:

  • 5 cloves garlic
  • 5 candlenuts
  • 1 tablespoon coriander seeds
  • 3 lime leaves, finely sliced
  • Salt, to taste
  • 3 tablespoons tamarind water
  • 1 tablespoon grated palm sugar
  • 5 tablespoons sweet soy sauce

For the Stir-Fry:

  • 3 cloves garlic
  • 3 shallots
  • 3 bird’s eye chilies (adjust to taste)
  • Beef bouillon powder, to taste
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon margarine

Instructions:

  1. Prepare the Spice Paste:

    • In a mortar and pestle or food processor, combine garlic, candlenuts, and coriander seeds to create a fine paste.
    • Add the lime leaves and a pinch of salt, continuing to grind until the mixture is smooth and aromatic.
  2. Marinate the Beef:

    • Rub the prepared spice paste all over the beef cubes.
    • Add tamarind water, grated palm sugar, and sweet soy sauce to the beef, mixing well to ensure all pieces are evenly coated.
    • Allow the beef to marinate for at least 30 minutes to absorb the flavors.
  3. Cook the Stir-Fry Ingredients:

    • Heat the margarine in a large skillet over medium heat.
    • Finely chop the garlic, shallots, and bird’s eye chilies, and add them to the skillet.
    • Sauté until the mixture is fragrant and the shallots are translucent.
  4. Combine and Cook:

    • Add the marinated beef to the skillet. Cook, stirring occasionally, until the beef is browned and cooked through, approximately 5 minutes.
    • Season with beef bouillon powder, salt, and black pepper to taste. Stir well to combine and ensure the beef is evenly seasoned.
  5. Serve:

    • Transfer the cooked beef to a serving dish.
    • Serve hot, garnished with additional lime leaves if desired.
