Ingredients:
- 250 grams beef tenderloin (or your preferred cut)
- 1 carrot, peeled and cut into chunks
- 2 potatoes, peeled and cut into chunks
- 1/4 head of cabbage, chopped
- 1/2 large onion, roughly chopped
- 5 cloves shallots, thinly sliced
- 1/2 nutmeg, crushed
- 5 cloves
- White pepper, to taste
- Black pepper, to taste
- Salt, to taste
- Sugar, to taste (as a substitute for seasoning)
Instructions:
-
Sauté Aromatics:
Begin by heating a generous splash of oil in a large pot over medium heat. Add the chopped onion and sliced shallots, and cook until they become fragrant and translucent. -
Add Spices and Meat:
Stir in the cloves and crushed nutmeg. Add the beef tenderloin to the pot, and cook until it begins to brown on all sides. -
Incorporate Vegetables:
Once the beef is seared, add the carrot and potato chunks, followed by the chopped cabbage. Stir to combine all the ingredients. -
Simmer:
Pour in enough water to cover the contents of the pot. Season with white pepper, black pepper, salt, and a pinch of sugar to taste. Bring the mixture to a boil, then reduce the heat and let it simmer until the meat and vegetables are tender, approximately 45 minutes to 1 hour. For a quicker cooking process, consider using a pressure cooker. -
Adjust Seasoning:
Taste and adjust seasoning as needed. Add more salt or sugar if desired to balance the flavors. -
Serve:
Ladle the hot soup into bowls and serve immediately. Enjoy this comforting and hearty soup on a chilly day or as a warming family meal.
