Sop Sapi: A Hearty Indonesian Beef Soup Recipe

Ingredients:

  • 250 grams beef tenderloin (or your preferred cut)
  • 1 carrot, peeled and cut into chunks
  • 2 potatoes, peeled and cut into chunks
  • 1/4 head of cabbage, chopped
  • 1/2 large onion, roughly chopped
  • 5 cloves shallots, thinly sliced
  • 1/2 nutmeg, crushed
  • 5 cloves
  • White pepper, to taste
  • Black pepper, to taste
  • Salt, to taste
  • Sugar, to taste (as a substitute for seasoning)

Instructions:

  1. Sauté Aromatics:
    Begin by heating a generous splash of oil in a large pot over medium heat. Add the chopped onion and sliced shallots, and cook until they become fragrant and translucent.

  2. Add Spices and Meat:
    Stir in the cloves and crushed nutmeg. Add the beef tenderloin to the pot, and cook until it begins to brown on all sides.

  3. Incorporate Vegetables:
    Once the beef is seared, add the carrot and potato chunks, followed by the chopped cabbage. Stir to combine all the ingredients.

  4. Simmer:
    Pour in enough water to cover the contents of the pot. Season with white pepper, black pepper, salt, and a pinch of sugar to taste. Bring the mixture to a boil, then reduce the heat and let it simmer until the meat and vegetables are tender, approximately 45 minutes to 1 hour. For a quicker cooking process, consider using a pressure cooker.

  5. Adjust Seasoning:
    Taste and adjust seasoning as needed. Add more salt or sugar if desired to balance the flavors.

  6. Serve:
