Gulai Kikil Sapi: A Rich and Flavorful Indonesian Beef Tendon Stew

Ingredients:

  • 500 grams of beef tendon (kikil sapi)
  • 2 large potatoes (kentang), peeled and cut into chunks
  • 1 stalk lemongrass (serai), smashed
  • 3 bay leaves (daun salam)
  • 1 turmeric leaf (daun kunyit)
  • Salt to taste
  • Grated coconut (kelapa parut)

For the spice paste:

  • 4 shallots (bawang merah)
  • 2 cloves garlic (bawang putih)
  • A small piece of galangal (lengkuas), about the size of a fingertip
  • A small piece of ginger (jahe), about half the size of a fingertip
  • 20 red chilies (cabe merah)

Steps:

  1. Prepare the Coconut:

    • Squeeze the grated coconut to separate the thick coconut milk (santan kental) from the thin coconut milk (santan cair). Set aside both.
  2. Prepare the Ingredients:

    • Cut the beef tendon into bite-sized pieces.
    • Peel and cut the potatoes into chunks.
  3. Blend the Spice Paste:

    • In a blender, combine the shallots, garlic, galangal, ginger, and red chilies. Blend until smooth to create a vibrant spice paste.
  4. Cook the Spice Paste:

    • Heat some oil in a pan over medium heat. Add the blended spice paste and sauté until it becomes fragrant and the oil starts to separate from the paste.
  5. Simmer the Dish:

    • Pour in the thin coconut milk and stir until it begins to boil.
    • Add the bay leaves, turmeric leaf, lemongrass, and potatoes. Stir well.
  6. Add Beef Tendon:

    • Once the potatoes are halfway cooked (about 15-20 minutes), add the thick coconut milk and beef tendon pieces. Continue to cook, stirring occasionally, until the beef tendon is tender, the potatoes are fully cooked, and the sauce has thickened and the oil has separated.
  7. Season and Serve:

    • Season with salt to taste. Stir and adjust seasoning as needed.
