Indonesian Beef Tongue Stew with Crispy Potatoes and Onions

Title: Bistik Lidah Sapi: Indonesian Beef Tongue Stew

Ingredients:

  • 400-500 grams beef tongue (pre-cooked, cleaned, and sliced)
  • 1 potato, peeled, cut, and fried until golden brown
  • 1 large onion, sliced
  • Enough water, salt, and broth to taste
  • 1 tablespoon margarine or butter
  • 2 tablespoons crispy fried onions

Marinade:

  • 6 cloves garlic, finely minced
  • 6 tablespoons sweet soy sauce
  • 3 tablespoons mushroom soy sauce or regular soy sauce
  • 3 tablespoons oyster sauce
  • 1-1.5 teaspoons ground black pepper
  • 1 teaspoon ground coriander
  • A pinch of ground nutmeg (to taste)

Instructions:

  1. Marinate the Beef Tongue: Begin by combining the sliced beef tongue with the marinade ingredients—minced garlic, sweet soy sauce, mushroom soy sauce, oyster sauce, black pepper, ground coriander, and ground nutmeg. Ensure that the beef tongue is well-coated. Allow it to marinate for at least 1 hour; for best results, refrigerate it.

  2. Prepare the Onions: Heat a small amount of oil and margarine in a pan. Add the sliced onion and cook until it becomes soft and golden brown. Once done, set the onions aside.

  3. Cook the Beef Tongue: In the same pan, add a little more oil if needed and then add the marinated beef tongue. Sauté briefly until it starts to release a pleasant aroma. Pour in enough water to cover the beef tongue, then cook over low heat.

  4. Simmer and Season: Bring the mixture to a boil, then season with salt and stir. Allow the beef tongue to simmer until the liquid has reduced and the flavors have melded together, adjusting the seasoning as needed.

  5. Combine Ingredients: Just before finishing, stir in the fried potato pieces, cooked onions, and crispy fried onions. Mix well and cook for a few more minutes to combine the flavors.
