Tongseng Lidah Sapi: A Flavorful Indonesian Beef Tongue Stew

Ingredients:

  • 500 grams beef tongue, boiled for 1 hour and sliced into 1/4-inch rounds
  • 1/4 head of cabbage, thinly sliced
  • 2 tomatoes, sliced
  • 1 stalk green onion, sliced
  • 2 stalks chives (optional), sliced
Spice Paste:
  • 2 red chili peppers
  • 1 thumb-sized piece of turmeric, roasted
  • 1 thumb-sized piece of ginger, roasted
  • 1 thumb-sized piece of galangal
  • 1 teaspoon toasted coriander seeds
  • 3 candlenuts, toasted
Additional Ingredients:
  • 3 tablespoons sweet soy sauce
  • 1 pack (65ml) Kara coconut milk
  • 1 liter water
  • 1 teaspoon ground black pepper
  • Salt and seasoning, to taste
  • A pinch of brown sugar
  • 3 tablespoons cooking oil
To Serve:
  • Shrimp crackers

Instructions:

  1. Prepare the Spice Paste:
    Begin by blending the red chili peppers, roasted turmeric, roasted ginger, galangal, toasted coriander seeds, and toasted candlenuts into a smooth paste.

  2. Sauté the Spice Paste:
    Heat the cooking oil in a large pot over medium heat. Add the prepared spice paste and sauté until fragrant and the oil starts to separate from the paste.

  3. Cook the Beef Tongue:
    Add the sliced beef tongue to the pot, stirring to coat it well with the spice paste. Cook for a few minutes, allowing the flavors to meld.

  4. Add Liquids and Seasonings:
    Pour in the water, sweet soy sauce, and coconut milk. Stir well, then bring the mixture to a boil. Season with ground black pepper, salt, seasoning, and a pinch of brown sugar. Adjust to taste.

  5. Incorporate Vegetables:
    Add the sliced cabbage, green onion, tomatoes, and chives (if using) to the pot. Stir to combine and cook until the vegetables are tender and the beef tongue is fully cooked.

  6. Adjust Seasoning:
    Taste the stew and adjust the seasoning if needed. Let it simmer for a few more minutes if you prefer a thicker consistency.

  7. Serve:
    Ladle the Tongseng Lidah Sapi into bowls and serve hot with shrimp crackers on the side.
