Butter Chicken Sauce ala Mama Kina

Ingredients:

  • 10 pieces of chicken, boiled
  • 1 medium-sized tomato, sliced
  • 3 stalks of green onions, chopped (0.5 cm intervals)
  • 3 cloves of garlic, thinly sliced
  • 3 cloves of shallots, thinly sliced
  • 1/2 medium-sized onion, thinly sliced
  • 2 red chilies, diagonally sliced
  • 2 green chilies, diagonally sliced
  • Butter, as needed (approximately 2 1/2 tablespoons)
  • Salt
  • 2 teaspoons sugar
  • 1/2 teaspoon white pepper powder
  • 1 tablespoon chicken seasoning (e.g., Royco)
  • 4 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil

Instructions:

  1. Begin by frying the boiled chicken until golden brown. Drain and set aside.

  2. In a large pan, melt butter over low heat. Add onions, garlic, and shallots. Sauté gently until fragrant and translucent.

  3. Add the fried chicken to the pan, stirring gently to combine. Allow the chicken to absorb the flavors.

  4. Incorporate red and green chilies, salt, sugar, white pepper powder, sweet soy sauce, oyster sauce, and chicken seasoning. Stir well until the sauce thickens and coats the chicken.
