Ayam Goreng Mentega: Indonesian Butter Fried Chicken

  1. Marinate the Chicken:

    • In a bowl, combine the soy sauce, finely chopped garlic, and lemon or lime juice. Add 1 tablespoon of water to the mixture.
    • Coat the chicken pieces with this marinade. Let the chicken marinate for 15 to 20 minutes, allowing the flavors to infuse and the seasoning to penetrate the meat.
  2. Fry the Chicken:

    • Heat oil in a frying pan over medium-high heat. Once hot, carefully add the marinated chicken pieces.
    • Fry the chicken until it is golden brown and crispy. Remove from the pan and drain on paper towels to remove excess oil.
  3. Prepare the Sauce:

    • In a clean pan, melt the margarine or butter over medium heat.
    • Add the finely chopped garlic and shallots, sautΓ©ing briefly until fragrant.
    • Add the thinly sliced onion and continue to cook until the onions become soft and translucent.
    • Stir in the oyster sauce, sweet soy sauce, tomato ketchup, salt, sugar, and pepper. Mix well.
    • Pour in a little hot water to adjust the sauce’s consistency as needed. Allow the sauce to simmer until it reaches a desired thickness.
  4. Combine Chicken and Sauce:

    • Once the sauce is ready, add the fried chicken pieces to the pan.
    • Squeeze in the juice of 1 lime and stir to coat the chicken evenly with the sauce.
    • Add the chopped green onion and mix well. Taste and adjust seasoning if necessary.
  5. Serve:

    • Serve the Ayam Goreng Mentega hot, straight from the pan.

Note: If you have soy sauce, you can add 2 tablespoons of it to the sauce for an additional depth of flavor.
