Ayam Goreng Mentega (Indonesian Butter Fried Chicken)
Ingredients
- 1/2 chicken, cleaned and cut into pieces
- 5 tablespoons butter
- 3 cloves garlic, sliced
- 1 onion, sliced
- 3 red chilies, sliced
- Bird’s eye chilies (to taste), sliced
- Soy sauce
- Oyster sauce
- 1 tomato, chopped
- 3 tablespoons Worcestershire sauce
- 2 tablespoons sesame oil
- 2 tablespoons ketchup
- Salt, to taste
Instructions

Fry the Chicken:
- Begin by frying the chicken pieces until they are golden brown. Set them aside on a paper towel to drain any excess oil.

Prepare the Sauce:
- In a large pan or wok, melt the butter over medium heat.
- Add the sliced garlic and onion, sautéing until they become fragrant and slightly softened.
- Add the sliced red chilies and bird’s eye chilies, and continue to cook for another 2-3 minutes.

Combine Ingredients:
- Pour in a small amount of water to create a bit of steam and prevent sticking.
- Add the oyster sauce, ketchup, soy sauce, Worcestershire sauce, and sesame oil to the pan, stirring well to combine.

Add the Chicken:
- Return the fried chicken pieces to the pan, making sure they are well-coated with the sauce.
- Add the chopped tomato and salt to taste, mixing everything thoroughly.

Simmer:
- Allow the chicken to simmer in the sauce for about 10-15 minutes, or until the flavors have fully absorbed into the chicken and the sauce has thickened.
