Indonesian Butter Fried Chicken with Spicy Soy Sauce

Ayam Goreng Mentega (Indonesian Butter Fried Chicken)

Ingredients

  • 1/2 chicken, cleaned and cut into pieces
  • 5 tablespoons butter
  • 3 cloves garlic, sliced
  • 1 onion, sliced
  • 3 red chilies, sliced
  • Bird’s eye chilies (to taste), sliced
  • Soy sauce
  • Oyster sauce
  • 1 tomato, chopped
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons ketchup
  • Salt, to taste

Instructions

  1. Fry the Chicken:

    • Begin by frying the chicken pieces until they are golden brown. Set them aside on a paper towel to drain any excess oil.
  2. Prepare the Sauce:

    • In a large pan or wok, melt the butter over medium heat.
    • Add the sliced garlic and onion, sautéing until they become fragrant and slightly softened.
    • Add the sliced red chilies and bird’s eye chilies, and continue to cook for another 2-3 minutes.
  3. Combine Ingredients:

    • Pour in a small amount of water to create a bit of steam and prevent sticking.
    • Add the oyster sauce, ketchup, soy sauce, Worcestershire sauce, and sesame oil to the pan, stirring well to combine.
  4. Add the Chicken:

    • Return the fried chicken pieces to the pan, making sure they are well-coated with the sauce.
    • Add the chopped tomato and salt to taste, mixing everything thoroughly.
  5. Simmer:

    • Allow the chicken to simmer in the sauce for about 10-15 minutes, or until the flavors have fully absorbed into the chicken and the sauce has thickened.
  6. Serve:

    • Transfer the Ayam Goreng Mentega to a serving dish and serve hot. Enjoy this delicious Indonesian butter fried chicken with steamed rice or your favorite side dish.
