Ayam Goreng Mentega (Indonesian Butter Fried Chicken)

Ingredients:

  • 1 kg chicken pieces
  • 1/2 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 5 tablespoons sweet soy sauce (kecap manis)
  • 3 tablespoons soy sauce (kecap Inggris)
  • 3 tablespoons margarine or butter
  • Juice of 2 calamansi limes (or substitute with lime juice)
  • Salt, to taste
  • Juice of 1 lime

Instructions:

  1. Marinate the Chicken: Begin by seasoning the chicken pieces with salt and the juice of 1 lime. Let the chicken marinate for 15 minutes, allowing the flavors to infuse into the meat. Set aside.

  2. Fry the Chicken: Heat oil in a pan and fry the marinated chicken until it is golden brown and cooked through. Remove the chicken from the pan and set it aside.

  3. Prepare the Sauce: In the same pan, melt the margarine or butter over medium heat. Add the thinly sliced onion and minced garlic, sautéing until they are soft and translucent. (Note: If you prefer, you can skip the onion if it’s not to your taste.)

  4. Add Sauces: Stir in the sweet soy sauce and soy sauce, mixing well to combine with the onions and garlic.

  6. Finish with Lime Juice: Squeeze the juice of 2 calamansi limes over the chicken, giving it a final toss to incorporate the tangy flavor.
