Indonesian Chicken and Egg Curry (Opor Ayam)

Opor Ayam with Boiled Eggs

Ingredients:

  • 1 whole chicken
  • 8 eggs
  • 10 shallots
  • 2 cloves garlic
  • 2-inch piece of turmeric
  • 3 candlenuts
  • 1 teaspoon ground black pepper
  • 3 kaffir lime leaves
  • 3 bay leaves
  • 1-inch piece of galangal (crushed)
  • 2 stalks lemongrass (crushed)
  • 1 cup thick coconut milk

Instructions:

  1. Prepare the Spice Paste:
    Begin by blending or grinding the shallots, garlic, turmeric, and candlenuts into a smooth paste.

  2. Cook the Spice Paste:
    Heat some oil in a large pan over medium heat. Add the spice paste to the pan and sauté until fragrant.

  3. Add Aromatics:
    Once the paste is aromatic, incorporate the lemongrass, bay leaves, galangal, and kaffir lime leaves. Continue to cook for a few minutes to release their flavors.

  4. Cook the Chicken:
    Add the whole chicken to the pan. Cook the chicken, turning occasionally, until it is thoroughly cooked and tender.

  5. Prepare the Eggs:
    While the chicken is cooking, boil the eggs until hard. Peel and fry them in a separate pan until golden brown.

  6. Add Coconut Milk:
    Once the chicken is tender, pour in the thick coconut milk, stirring gently to combine. Ensure the coconut milk does not curdle by keeping the heat moderate.

  7. Combine Ingredients:
    Add the fried eggs to the chicken and coconut milk mixture. Stir gently to incorporate the eggs without breaking them.

  8. Finish and Serve:
    Bring the mixture to a gentle boil, then remove from heat. Garnish with fried shallots.

  9. Enjoy:
