Opor Ayam with Boiled Eggs
Ingredients:
- 1 whole chicken
- 8 eggs
- 10 shallots
- 2 cloves garlic
- 2-inch piece of turmeric
- 3 candlenuts
- 1 teaspoon ground black pepper
- 3 kaffir lime leaves
- 3 bay leaves
- 1-inch piece of galangal (crushed)
- 2 stalks lemongrass (crushed)
- 1 cup thick coconut milk

Prepare the Spice Paste:
Begin by blending or grinding the shallots, garlic, turmeric, and candlenuts into a smooth paste. -
Cook the Spice Paste:
Heat some oil in a large pan over medium heat. Add the spice paste to the pan and sauté until fragrant. -
Add Aromatics:
Once the paste is aromatic, incorporate the lemongrass, bay leaves, galangal, and kaffir lime leaves. Continue to cook for a few minutes to release their flavors. -
Cook the Chicken:
Add the whole chicken to the pan. Cook the chicken, turning occasionally, until it is thoroughly cooked and tender. -
Prepare the Eggs:
While the chicken is cooking, boil the eggs until hard. Peel and fry them in a separate pan until golden brown. -
Add Coconut Milk:
