Sayur Ayam dan Telur Bumbu Rendang
This aromatic and savory Indonesian dish blends tender chicken and hard-boiled eggs with a rich rendang spice mix and creamy coconut milk. It’s a comforting meal that’s both satisfying and full of flavor. Here’s how to prepare it:

Ingredients:
- 1/2 kg chicken, cut into pieces
- 6 hard-boiled eggs
- 1 pack (200 ml) Kara coconut milk
- 1 tablespoon sugar
- 1 packet rendang seasoning (like Indofood brand)
- 1 pot water (about 500 ml)
For the Spice Paste:
- 2 candlenuts
- 2 red chilies
- 1 small tomato
- 2 shallots
- 1 garlic clove
- A pinch of salt
Instructions:
-
Prepare the Spice Paste:
Begin by grinding the candlenuts, red chilies, tomato, shallots, garlic, and salt into a smooth paste using a mortar and pestle or food processor. This spice paste will form the flavorful base of your dish. -
Prepare the Chicken:
Cut the chicken into your desired pieces. Rinse the chicken thoroughly and then fry it in hot oil until it’s golden and cooked through. This step helps remove any raw chicken smell and adds a lovely crispy texture to the chicken. -
Cook the Spice Paste:
In a large pot, heat some oil over medium heat. Add the spice paste and the rendang seasoning. Sauté until the mixture becomes fragrant and the oil starts to separate from the paste, indicating that it’s cooked through. -
Combine Ingredients:
Add the fried chicken pieces and hard-boiled eggs to the pot. Stir well to coat the chicken and eggs with the spice paste. -
Add Liquid:
Pour in the water and bring the mixture to a boil. Reduce the heat and let it simmer until the chicken is tender and fully cooked, and the flavors have melded together. -
Finish the Dish:
Stir in the Kara coconut milk and sugar. Adjust the seasoning to taste, adding more salt or sugar if needed. Allow it to simmer gently for a few more minutes until the sauce has thickened slightly. -
Serve:
Once the dish is ready and has a rich, flavorful sauce, remove it from heat. Serve hot, and enjoy the hearty, comforting flavors of this traditional Indonesian dish.
Happy cooking! 😊🍛
