Indonesian Chicken and Potato Stew (Semur Ayam Kentang)

Ingredients:

  • 1/2 chicken, cut into pieces
  • Potatoes, as desired
  • Spice Paste:
    • Garlic, adjust to taste
    • Shallots
    • Black pepper
    • Candle nuts
    • Nutmeg, a pinch
    • Red curly chili peppers, for heat (optional)
    • Ginger, a small piece
  • Spices:
    • Bay leaves
    • Galangal
    • Lemongrass
    • Cardamom
    • Cinnamon
    • Slices of onion
    • Tomato slices
    • Salt
    • Sweet soy sauce (kecap manis)
    • A pinch of seasoning powder
    • Lime for marinating chicken

Steps:

  1. Clean the chicken thoroughly and marinate with lime juice.
  2. Rinse the chicken again and rub with salt, then briefly boil and fry until golden brown.
  3. Fry the potatoes according to your preference until golden brown and set aside.
  4. Sauté the sliced onion, then add the spice paste and all the spices along with tomato slices and sweet soy sauce.
  5. Once fragrant, add water and bring to a boil.
  6. Season with salt and seasoning powder. Adjust sweetness with more sweet soy sauce if needed.
  7. Add the fried potatoes and chicken.
  8. Simmer until the sauce thickens, approximately 5 minutes.
  9. Garnish with fried shallots according to taste.
