Semur Ayam Tahu: A Flavorful Indonesian Chicken and Tofu Stew

Ingredients:

  • 500 grams chicken (cut into pieces)
  • 10 pieces fried tofu (cut into cubes)
  • 2 cloves garlic (minced)
  • 5 shallots (sliced thinly)
  • 2 candlenuts (ground)
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • Sugar to taste
  • 1 tomato (chopped)
  • 1 bay leaf
  • 1 kaffir lime leaf
  • 1 stalk lemongrass (optional, not used in this version)
  • 1 thumb-sized piece of galangal (sliced)
  • 200 ml water
  • 3 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Ingredients:

    • Start by frying the chicken pieces until they are golden brown. Set them aside.
    • Fry the tofu cubes until crispy and golden. Set them aside as well.
    • In a blender or mortar and pestle, combine the garlic, shallots, and candlenuts. Blend or grind until smooth.
  2. Cook the Spice Mixture:

    • Heat the cooking oil in a large skillet or wok over medium heat. Add the ground spice mixture to the hot oil and sauté until the spices are fragrant and the shallots become translucent.
  3. Combine Ingredients:

    • Add the fried chicken pieces and tofu cubes to the skillet. Stir well to coat them evenly with the spice mixture.
    • Season with salt, sugar, and sweet soy sauce. Mix until the ingredients are well combined.
  4. Add Liquid and Aromatics:

    • Pour in the water and add the chopped tomato, bay leaf, kaffir lime leaf, and galangal slices. If you’re using lemongrass, add it here as well.
    • Stir the mixture and let it simmer until the sauce thickens and the flavors meld together. This should take about 15-20 minutes.
  5. Finish and Serve:

    • Once the sauce has reduced and thickened to your liking, remove the pan from heat.
    • Transfer the semur ayam tahu to a serving dish and enjoy!

  • Adjust the amount of sugar according to your taste preference to balance the savory and sweet flavors.
  • This dish pairs beautifully with steamed rice and can be garnished with fresh cilantro if desired.
