Indonesian Chicken and Tofu Stew with Spicy Soy Sauce

Semur Ayam Tahu Recipe

Ingredients:

  • 1/2 kg chicken, cut into pieces
  • 10 pieces of fried tofu
  • 2 cloves garlic
  • 5 shallots
  • 2 candlenuts
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • White sugar, to taste
  • 1 tomato, chopped
  • 1 bay leaf
  • 1 kaffir lime leaf
  • 1 stalk lemongrass (optional)
  • 1 thumb-sized piece of galangal, sliced
  • 200 ml water
  • 3 tablespoons soy sauce
  • 2 tablespoons cooking oil

Instructions:

  1. Prepare the Chicken and Tofu:

    • Fry the chicken pieces until they are golden brown.
    • Fry the tofu pieces until crispy. Set aside.
  2. Make the Spice Paste:

    • Blend the garlic, shallots, and candlenuts into a smooth paste.
  3. Cook the Spice Paste:

    • Heat the cooking oil in a large skillet or wok over medium heat.
    • Add the blended spice paste and sauté until fragrant and translucent.
  4. Combine Ingredients:

    • Add the fried chicken and tofu to the skillet. Stir well to coat the ingredients with the spice paste.
    • Add the sugar, salt, and soy sauce. Mix thoroughly.
  5. Simmer:

    • Pour in the water and add the chopped tomato, bay leaf, kaffir lime leaf, lemongrass (if using), and galangal.
    • Stir to combine, and let it simmer until the sauce thickens and the flavors meld together, about 20-30 minutes.
  6. Final Touches:

    • Taste and adjust seasoning if needed. Remove from heat once the sauce has reduced and thickened to your liking.
  7. Serve:

    • Transfer to a serving dish and enjoy with steamed rice or your favorite side dishes.
