Bakso Ayam (Indonesian Chicken Meatballs)

Ingredients:

For the Chicken Meatballs:

  • 500 grams ground chicken
  • 4 tablespoons tapioca flour
  • 2 egg whites
  • 1 1/2 tablespoons salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon ground pepper
  • 5 cloves garlic, thinly sliced
  • 3 shallots, thinly sliced

For the Broth:

  • 1 liter water (or chicken broth)
  • 2 cloves garlic, crushed
  • 2 tablespoons garlic, thinly sliced and fried
  • 1 tablespoon shallots, thinly sliced and fried
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground pepper
  • Finely chopped celery, to taste

Instructions:

Preparing the Chicken Meatballs:

  1. Fry the Garlic and Shallots: Heat oil in a pan over medium heat. Fry the garlic and shallots until golden brown and fragrant, ensuring they do not burn. Once done, transfer to a plate and crush them using the back of a spoon. This method helps prevent the garlic and shallots from sticking to the mortar. Feel free to use a mortar and pestle if you prefer.

  2. Combine Ingredients: In a large bowl, mix the ground chicken, tapioca flour, egg whites, salt, sugar, ground pepper, and the crushed garlic and shallots. Stir until all ingredients are well combined. To check the seasoning, take a small portion of the mixture and boil it. Adjust seasoning if necessary.

  3. Shape the Meatballs: Use two tablespoons to shape the mixture into balls. Drop them into a pot of boiling water. Boil the meatballs until they float to the surface. Once cooked, remove them with a slotted spoon and set aside.

Preparing the Broth:

  1. Prepare the Broth: In a large pot, heat 2 tablespoons of vegetable oil over medium heat until hot. Add the crushed garlic and sauté until fragrant and slightly browned. Quickly add the water or chicken broth to prevent the garlic from burning.

  2. Season the Broth: Add the fried garlic, fried shallots, salt, and ground pepper to the pot. Bring to a boil, then adjust the seasoning to taste.

  3. Add the Meatballs: Add the meatballs to the broth and let them simmer for a few minutes. Turn off the heat and sprinkle with chopped celery.

Serving Suggestions:

Serve the bakso ayam hot with vermicelli noodles (suun), siomai (dumplings), fried shallots, and fresh celery leaves. Enjoy this comforting dish that brings a taste of Indonesia to your table.
