Sayur Sop Ceker Kuah Telur (Chicken Feet Soup with Egg)

Ingredients

For the Soup

  • Carrots
  • Green beans
  • Cabbage
  • Scallions
  • Optional: Potatoes and celery, or any other vegetables of your choice
  • Bay leaves
  • 7-8 large chicken feet (adjust to your preference)
  • 1 egg
  • Salt
  • Sugar
  • Flavor enhancer (optional)
  • 1/2 pack of pre-mixed vegetable soup seasoning
  • Fried shallots for garnish
  • 1 tomato
  • Vegetable oil for sautéing

For the Spice Paste

  • 4 shallots
  • 5 garlic cloves
  • Pepper
  • Salt

Instructions

  1. Prepare the Vegetables: Chop the carrots, green beans, cabbage, scallions, and any additional vegetables you choose. Rinse them thoroughly under cold water.

  2. Cook the Chicken Feet: Boil the chicken feet until they become tender. Once done, drain and set aside.

  3. Make the Spice Paste: Using a mortar and pestle or a food processor, grind the shallots, garlic cloves, pepper, and salt into a smooth paste.

  4. Sauté the Spice Paste: Heat a little vegetable oil in a pan. Sauté the spice paste along with the bay leaves until the mixture is fragrant. Remove from heat and set aside.

  5. Prepare the Soup Base: In a large pot, bring water to a boil. Add the sautéed spice paste to the boiling water.

  6. Cook the Vegetables and Chicken Feet: Start by adding the chicken feet and carrot pieces to the pot since they require more cooking time. Once they start to soften, add the remaining vegetables.

  7. Season the Soup: Add salt, sugar, flavor enhancer (if using), and the pre-mixed vegetable soup seasoning. Stir well and taste the broth, adjusting the seasonings as necessary.

  8. Add the Egg: Crack the egg directly into the pot and immediately stir to break it up and distribute it throughout the soup.

  9. Finish and Garnish: Once all the vegetables are tender and the egg is cooked, remove the pot from heat. Garnish the soup with fried shallots and chopped tomato.
