Indonesian Chicken Noodle Soup (Mie Ayam)
Ingredients:
- 1 packet of chicken breast (or half chicken breast), boiled until half-cooked
- Egg noodles, as desired
- Bok choy, to taste
- Green onions, chopped
- 1 bay leaf
- Water, as needed
- Sugar, to taste
- Salt, to taste
- Soy sauce, to taste
- Optional: seasoning powder
- 3 cloves garlic
- 2 cloves garlic (crushed)
- 4 shallots
- 1/2 tsp coriander
- 2 candlenuts
- 1 turmeric, grated
- Ground pepper, to taste
Instructions:

Rinse the chicken and boil until half-cooked. Remove the chicken from the broth and set aside. Shred or cut the chicken into small pieces. Set aside.

Add crushed garlic, ground pepper, seasoning powder, sliced green onions, and bay leaf into the broth. Cook further and adjust seasoning. Turn off the heat.

Prepare the spice paste: garlic, shallots, candlenuts, coriander, grated turmeric, and bay leaf. Sauté until fragrant. Add enough water and the shredded chicken. Add soy sauce, salt, sugar, and seasoning powder. Adjust seasoning and cook until done.

Boil water and briefly blanch the bok choy. Drain and set aside.

Prepare egg noodles in a bowl, pour boiling water over them, and wait until soft. Drain.

Serving: Arrange noodles in a bowl, add bok choy, chicken mixture, green onions, and ladle with the broth. Add extra sauce and soy sauce if desired.
