Mie Ayam Pangsit: A Delicious Indonesian Noodle Soup with Chicken and Crispy Wontons

Ingredients

For the Topping:

  • 1/2 kg chicken breast, diced (bone-in or with feet optional)

For the Spice Paste:

  • 6 shallots
  • 4 cloves garlic
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon black pepper
  • 1 piece fresh turmeric (or turmeric powder)
  • 1 piece ginger, smashed
  • 2 stalks lemongrass
  • 3 cm galangal, smashed
  • 2 bay leaves

Additional Ingredients:

  • 1 onion, thinly sliced
  • Sugar to taste
  • Salt to taste
  • Chinese cabbage leaves
  • Spring onions
  • Wontons (store-bought or homemade)
  • Soy sauce
  • Sesame oil

Instructions

  1. Prepare the Chicken:

    • Clean and dice the chicken breast. Optionally, include bones or feet for added flavor.
  2. Make the Spice Paste:

    • Blend shallots, garlic, coriander seeds, black pepper, fresh turmeric (or turmeric powder), and ginger until smooth.
  3. Cook the Spice Paste:

    • Heat oil in a skillet. Sauté the spice paste until aromatic.
    • Add the sliced onion, lemongrass, galangal, and bay leaves. Cook until the onions are softened and fragrant.
  4. Cook the Chicken:

    • Season with sugar, salt, and additional seasonings as needed.
    • Add the diced chicken to the pan. Stir briefly, then pour in 200 ml of water. Cover and simmer until the chicken is cooked through. Adjust seasoning to taste and set aside.
  5. Prepare the Noodles:

    • Boil approximately 500 ml of water in a pot.
    • Add the noodles and Chinese cabbage leaves. Cook for about 3 minutes or until the noodles are tender. Drain and transfer to bowls.
  6. Season the Noodles:

    • Season the noodles with a pinch of salt and optional seasonings. Drizzle with soy sauce and a touch of sesame oil if desired. Toss to combine.
  7. Assemble the Dish:

    • Ladle the hot broth over the seasoned noodles.
    • Top with the cooked chicken, sliced spring onions, and crispy wontons.
  8. Serve:

    • Serve immediately and enjoy your homemade Mie Ayam Pangsit!
