Bubur Ayam Kuah Kuning: Indonesian Chicken Porridge with Yellow Broth

Ingredients

For the Chicken:

  • 2 pieces of chicken (cut into portions)
  • 1 liter water

For the Porridge:

  • 1 cup rice
  • 1/2 liter water
  • 1/2 liter chicken stock
  • 1 bay leaf
  • Salt to taste

For the Yellow Broth:

  • 3 cloves garlic
  • 3 shallots
  • Turmeric (to taste)
  • Ginger (to taste)
  • A pinch of coriander
  • 2 candlenuts
  • Galangal (to taste)
  • Lemongrass (to taste)
  • Salt to taste
  • Sugar to taste
  • Kaffir lime leaves
  • Bay leaf

Steps

  1. Cook the Chicken:

    • In a large pot, bring 1 liter of water to a boil. Add the chicken pieces and simmer until the chicken is tender and cooked through. Remove the chicken from the pot, shred the meat, and set aside. Reserve the chicken broth for later use.
  2. Prepare the Porridge:

    • Rinse the rice thoroughly under cold water. In a separate pot, combine the rinsed rice with 1/2 liter of water and 1/2 liter of chicken stock. Cook over medium heat, stirring occasionally, until the rice is soft and the mixture has a porridge-like consistency. If the mixture is too thick, add more water as needed. Add the bay leaf and season with salt to taste. Adjust seasoning as necessary and let the porridge simmer gently.
  3. Make the Yellow Broth:

    • Blend the garlic, shallots, turmeric, ginger, coriander, and candlenuts into a smooth paste. In a pan, heat some oil over medium heat and sauté the blended paste until fragrant and golden brown.
    • Add the galangal, lemongrass, kaffir lime leaves, and bay leaf to the pan. Stir well and cook for a few more minutes.
    • Pour in the reserved chicken broth and bring the mixture to a boil. Reduce heat and let it simmer for about 10-15 minutes to allow the flavors to meld. Season with salt and sugar to taste, adjusting as needed.
  4. Assemble the Dish:

    • To serve, ladle the warm porridge into bowls. Top with shredded chicken and pour the hot yellow broth over the top. Garnish with additional fresh herbs if desired.
