Sup Ayam (Indonesian Chicken Soup)

Ingredients:

  • 1 ear of sweet corn, cut into pieces
  • 1 carrot, sliced
  • 1 head of broccoli, cut into florets

  • 1/4 chicken, cut into pieces
  • 1/4 cabbage, chopped
  • 1 tablespoon red beans (soaked and cooked)

For the Spice Blend:

  • 2 cloves garlic, minced
  • 2 roasted candlenuts (kemiri)
  • 1 tablespoon Royco seasoning or similar chicken bouillon
  • Salt, to taste
  • Sugar, to taste
  • Ladaku seasoning, to taste

Instructions:

  1. Prepare the Chicken:
    Begin by washing the chicken pieces thoroughly. Place the chicken in a pot of water and bring to a boil. Once the water reaches a rolling boil and the chicken has released any impurities (usually a brown foam), discard the water and rinse the chicken pieces. This step helps ensure a clearer broth.

  2. Cook the Spice Blend:
    Heat a small amount of oil in a pan over medium heat. Add the minced garlic and roasted candlenuts, cooking until fragrant and golden brown. Once done, set this spice blend aside.

  3. Start the Soup:
    In a large pot, bring water to a boil. Add the sliced carrots, sweet corn, red beans, and chicken pieces. Allow the ingredients to cook until the vegetables are tender and the chicken is cooked through.

  4. Add the Spice Blend:
    Stir in the pre-cooked spice blend into the pot. Season with Royco seasoning, salt, sugar, and Ladaku seasoning according to your taste preferences. Adjust the seasoning to balance the flavors.

  5. Incorporate Remaining Vegetables:
    Add the chopped broccoli and cabbage to the pot. Continue to cook for a few more minutes, until the vegetables are tender yet still vibrant.
