Indonesian Chicken Stew with Tofu and Potatoes

Semur Ayam Tahu Kentang

Ingredients:

  • 500 grams chicken
  • 250 grams potatoes
  • 10 pieces of fried tofu, triangle shape
  • 5 shallots
  • 4 cloves of garlic
  • 1 thumb-sized piece of ginger
  • Galangal
  • 2 stalks of lemongrass
  • Bay leaves
  • Kaffir lime leaves
  • Sugar and salt to taste
  • Sweet soy sauce to taste

Steps:

  1. Begin by blending the shallots, garlic, and ginger until smooth. Smash the galangal and lemongrass.
  2. Heat a pan and sauté the blended spices along with the smashed galangal, lemongrass, bay leaves, and kaffir lime leaves. Add sugar and salt, and continue to sauté until fragrant.
  3. Pour in 1 liter of water and wait for it to boil. Once boiling, add the sweet soy sauce to your taste, and then add the chicken pieces. Cook until the chicken is partially cooked.
  4. Once the chicken is tender, add the fried tofu and potatoes. Continue cooking until the potatoes are soft and fully cooked.
  5. Turn off the heat, and your Semur Ayam Tahu Kentang is ready to be served. Enjoy!
