Pepes Ayam Selimut Tahu: Indonesian Chicken Wings Wrapped in Tofu

Ingredients:

  • 10 chicken wings
  • 10 small pieces of white tofu
  • 1/2 onion, finely chopped
  • 2 dried red chilies
  • 2 stalks of scallions (green onions), sliced
  • 8 bay leaves
  • A handful of Thai basil leaves
  • 1 ripe red tomato, diced
  • 8 bird’s eye chilies, left whole
  • For the Spice Paste:
    • 1 piece of turmeric, peeled and chopped
    • 5 candlenuts
    • 4 cloves of garlic
    • 4 shallots
    • Ground black pepper
    • Seasoning (optional)
    • Salt
    • Granulated sugar
  • Banana leaves, for wrapping
  • Toothpicks

Steps:

  1. Prepare the Tofu and Spice Paste:

    • Use a fork to mash the tofu and mix it with all the other ingredients until well combined. This will ensure that the tofu absorbs the flavors from the spices.
  2. Prepare the Chicken Wings:

    • Take each chicken wing and stuff it with the tofu mixture. Wrap the chicken wing with tofu using a piece of banana leaf, securing the ends with toothpicks.
  3. Steam the Wrapped Chicken Wings:

    • Preheat the steamer. Place the wrapped chicken wings in the steamer and steam for approximately 2 hours, or until the chicken is fully cooked and tender.
  4. Serve:

    • Once cooked, remove the chicken wings from the steamer. Carefully unwrap the banana leaves and serve the Pepes Ayam Selimut Tahu hot. Enjoy the fragrant and flavorful combination of chicken and tofu with a side of steamed rice.
