Soto Bening Daging Sapi (Clear Beef Soup)

Ingredients

  • Beef Broth:

    • 1/4 kg beef, cut into chunks
    • 1 ounce beef fat (to enhance the broth)
    • 1 piece galangal, crushed
    • 4 stalks lemongrass, crushed
    • 5 bay leaves
    • 7 kaffir lime leaves
    • 1 lime, cut into 4 wedges
    • 2 celery leaves
    • 1 scallion
    • Beef broth
    • Fried shallots for garnish
    • 1 tomato, quartered
  • Spice Paste:

    • 8 shallots
    • 4 cloves garlic
    • 1 piece ginger
    • 4 candlenuts
    • 1/2 teaspoon coriander
  • Garnishes:

    • Cabbage, thinly sliced
    • Carrots, julienned
    • Vermicelli or corn noodles

Preparation Steps

  1. Prepare the Spice Paste:

    • Blend the shallots, garlic, ginger, candlenuts, and coriander into a smooth paste.
  2. Sauté the Spices:

    • In a large pot, sauté the spice paste, crushed galangal, and crushed lemongrass until fragrant.
  3. Create the Broth:

    • Add 2-3 glasses of water to the pot.
    • Add the beef fat for richness.
    • Stir in the beef broth and taste for seasoning.
  4. Cook the Beef:

    • Add the beef chunks to the pot and simmer until tender.
  5. Prepare the Garnishes:

    • Separately boil the cabbage, carrots, and noodles until cooked.
    • Set aside.

    • Arrange the beef pieces, lime wedges, celery leaves, tomato quarters, and fried shallots in serving bowls.
    • Pour the hot broth over the top.
    • Serve with cabbage, carrots, and noodles as side dishes.
