Sop Bening Daging Sapi: A Hearty Indonesian Beef Soup

Ingredients:

  • 500 grams beef, cut into bite-sized pieces
  • 10 shallots
  • 8 cloves garlic
  • 1/2 nutmeg
  • 8 cloves
  • 7 cm cinnamon stick
  • 2 segments ginger
  • 3 star anise
  • 2 stalks green onions
  • 2 stalks celery
  • 3 carrots
  • 3 large potatoes
  • Salt, sugar, and pepper to taste
  • Lime
  • Fried shallots for garnish

Instructions:

  1. Prepare the Beef: Start by washing the beef thoroughly and cutting it into bite-sized pieces. In a large pot, bring water to a boil and add the beef pieces. Cook over medium heat until the beef becomes tender. Once tender, discard the water to remove impurities and add fresh water. Bring it back to a boil and simmer gently over medium heat.

  2. Prepare the Spice Paste: While the beef is simmering, finely chop the shallots, garlic, and ginger. Blend them together with the nutmeg until smooth. Heat a pan with a little oil and sauté the spice paste until fragrant.

  3. Combine Ingredients: Add the sautéed spice paste into the pot with the beef. Introduce the cinnamon stick, cloves, and star anise. Continue to cook until the beef is even more tender and the broth reduces slightly.

  4. Add Vegetables: Slice the green onions, celery, carrots, and potatoes. Add these vegetables to the pot with the beef. Season with salt, sugar, and pepper according to your taste preferences. Allow the soup to cook until the vegetables are tender and the flavors meld together.

  5. Final Touches: Once everything is cooked through, taste and adjust seasoning if needed. Serve the soup hot, garnished with fried shallots. Squeeze a bit of lime juice into each bowl for an extra touch of freshness. For those who like a bit of heat, consider adding some sambal on the side.
