Water (for chicken broth) 500 ml
Kaffir lime leaves 2 leaves
Bay leaves 2 leaves
Lemongrass 1 stalk (bruised)
Fried shallots (for garnish) To taste
Spice Blend:
Shallots 5 pieces
Garlic 2 cloves
Candlenuts 3 pieces
Coriander powder 1/2 tsp
Ground black pepper 1/2 tsp
Ginger (fresh) 1/2 cm
Galangal (fresh) 1/2 cm
Turmeric (fresh) 2 cm
Salt To taste
Sugar To taste
Flavor enhancer To taste

Instructions

  1. Prepare the Chicken: Begin by cleaning the chicken thoroughly. Rub it with lime juice and salt, allowing it to marinate for a few moments before rinsing again.

  2. Boil the Chicken: In a pot, boil the chicken until it reaches a rolling boil, then let it simmer for about 10 minutes. Drain the chicken and set aside.

  3. Fry the Tofu: In a pan, heat oil and fry the tofu until it is lightly golden and cooked halfway. Remove and drain on paper towels.

  4. Sauté the Spice Blend: In a clean pan, heat a little oil and sauté the ground spice blend along with the kaffir lime leaves, bay leaves, and bruised lemongrass until fragrant.

  5. Combine Ingredients: Add the pre-boiled chicken to the pan, stirring well to coat the chicken in the spices. Pour in the chicken broth from the previous step.

  6. Season the Dish: Add sugar, salt, and flavor enhancer to the mixture. Adjust to taste, allowing the flavors to meld as it simmers. Cook until the chicken is tender and fully cooked.

  7. Incorporate Tofu: Gently add the fried tofu into the pot, stirring carefully to avoid breaking the pieces.

  8. Add Coconut Milk: Once the chicken and tofu are cooked, pour in the Kara coconut milk. Use low heat to prevent the coconut milk from curdling.

  9. Serve: Once everything is heated through and well combined, transfer to a serving bowl and top with fried shallots for garnish. Serve warm with steamed rice for a complete meal.
