Opor Ayam Jawa: A Delicious Indonesian Chicken Stew

Opor Ayam Jawa is a traditional Indonesian chicken stew, rich in flavors and textures, that is sure to delight your taste buds with its aromatic spices and creamy coconut milk. Ingredients:

  • 1 whole chicken, cut into serving pieces
  • 1 liter coconut milk (or 800 ml water plus 200 ml coconut milk from a Kara pack)
  • 2 stalks lemongrass, bruised
  • 4 bay leaves
  • Salt to taste
  • 2 tablespoons palm sugar, shaved
  • For the Spice Paste:
    • 7 cloves garlic
    • 5 large shallots
    • 2-inch piece of ginger
    • 2-inch piece of turmeric
    • 4 candlenuts
    • 1 teaspoon cumin seeds
    • 1 tablespoon ground coriander

Instructions:

  1. Prepare the Spice Paste: In a blender or food processor, combine garlic, shallots, ginger, turmeric, candlenuts, cumin seeds, and ground coriander. Blend into a smooth paste.

  2. Sauté the Spice Paste: Heat some cooking oil in a large pan over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.

  3. Cook the Chicken: Add the chicken pieces to the pan, stirring briefly to coat them with the spice paste. Cook for a few minutes until the chicken starts to brown slightly.

  4. Add Coconut Milk and Aromatics: Pour in the coconut milk (or the mixture of water and Kara coconut milk). Add the bruised lemongrass and bay leaves. Stir well and bring the mixture to a gentle simmer.

  5. Simmer and Season: Allow the stew to cook gently until the sauce thickens and the chicken is tender, about 30 to 40 minutes. Stir occasionally. Season with salt and palm sugar to taste.

  6. Serve: Once the sauce has thickened and the chicken is cooked through, remove from heat. Serve hot, garnished with fried shallots if desired.
