Opor Ayam Telor Tahu, a traditional Indonesian dish, combines tender chicken, boiled eggs, and fried tofu in a luxurious, aromatic coconut milk sauce.   • 500 grams chicken, cut into pieces

  • 4 bay leaves
  • 4 kaffir lime leaves
  • 1 pack (65 ml) coconut milk (Kara brand)
  • 2 ½ teaspoons salt
  • 1 teaspoon sugar
Spice Paste:
  • 7 shallots
  • 4 cloves garlic
  • 5 candlenuts
  • 1 teaspoon coriander seeds
  • To taste black peppercorns
  • 2 thumb-sized pieces turmeric
  • 1 thumb-sized piece ginger

Instructions:

  1. Prepare the Chicken: Rinse the chicken pieces thoroughly and drizzle with lime juice. Boil the chicken in water until it is halfway cooked. Set aside.

  2. Make the Spice Paste: Using a food processor or mortar and pestle, blend together the shallots, garlic, candlenuts, coriander seeds, black peppercorns, turmeric, and ginger into a smooth paste.

  3. Cook the Spices: Heat a little oil in a large pan over medium heat. Add the spice paste and sauté until fragrant.

  4. Add Aromatics: Incorporate the smashed lemongrass, galangal, bay leaves, and kaffir lime leaves into the pan with the sautéed spice paste.

  5. Combine Ingredients: Add the partially cooked chicken, tofu, and boiled eggs into the pan. Stir well to combine with the spices.

  6. Simmer: Pour in 1 cup of the chicken broth used for boiling. Season with salt and sugar. Allow the mixture to simmer, letting the flavors meld together and the liquid reduce slightly.

  7. Add Coconut Milk: Once the liquid has reduced a bit, add the coconut milk, stirring frequently to ensure it does not curdle.
