Opor Tahu, Tempe, and Quail Eggs
Ingredients:
- 14 quail eggs
- 1 block tempe (cut into desired pieces)
- 8 pieces yellow tofu
- 300 ml coconut milk
For the Spice Paste:
- 6 red shallots
- 5 garlic cloves
- 3 candlenuts
- 3 inches turmeric
- 2 inches ginger
- 2 inches galangal
- 1 tablespoon coriander seeds
Additional Ingredients:
- 4 kaffir lime leaves
- 3 bay leaves
- 2 stalks lemongrass (crushed)
- Salt, sugar, and seasoning (such as Maggi or similar) to taste
- Optional: bird’s eye chilies (for extra heat)

Prepare the Spice Paste:
- Begin by making the spice paste. In a blender or food processor, combine the red shallots, garlic cloves, candlenuts, turmeric, ginger, galangal, and coriander seeds. Blend until you achieve a smooth paste.

Cook the Spice Paste:
- Heat some oil in a large pan over medium heat. Add the prepared spice paste along with the kaffir lime leaves, bay leaves, and crushed lemongrass. Sauté until the paste becomes aromatic and the oil starts to separate from the spices.

Add the Main Ingredients:
- Gently add the tofu, tempe, and quail eggs to the pan. Stir to coat them with the spice mixture.

Simmer:
- Pour in enough water to cover the ingredients, allowing them to be fully submerged. Season with salt, sugar, and seasoning powder to taste. Add the bird’s eye chilies if using. Bring the mixture to a boil.

Incorporate the Coconut Milk:
- Once the mixture is boiling, reduce the heat to low and add the coconut milk. Stir gently to combine and ensure the mixture does not come to a rolling boil, as this may cause the coconut milk to curdle.

Final Cooking:
- Continue to cook over low heat, stirring occasionally, until the tofu and tempe are tender and the flavors are well combined. Adjust seasoning as needed.

- Remove from heat and serve the opor hot, garnished with crispy fried shallots if desired, for added aroma and texture.
