Lodeh Krecek Tahu Tempe Recipe

Experience the rich and comforting flavors of Lodeh Krecek Tahu Tempe, a traditional Indonesian dish brimming with a harmonious blend of textures and spices. This recipe combines crispy krecek, tender tempeh, and smooth tofu in a creamy coconut milk base, perfect for a hearty meal.

Ingredients:

  • 1 package krecek (approximately 250g), cut into bite-sized pieces
  • 1 block tempeh, diced
  • 5 pieces cooked tofu, cubed
  • 3 stalks petai (stink beans), sliced
  • 200 ml instant coconut milk
  • Sufficient water
  • 2 cm piece of galangal, crushed
  • 2 kaffir lime leaves
  • 2 teaspoons granulated sugar
  • To taste, seasoning
  • For the Spice Paste:
    • 3 cloves garlic
    • 6 shallots
    • 10 red bird’s eye chilies (or large chilies)
    • 2 cm turmeric
    • 4 roasted candlenuts
    • 1 teaspoon salt

Instructions:

  1. Prepare the Ingredients:

    • Cut the tempeh and tofu into cubes. Slice the krecek and petai. Rinse the petai thoroughly.
  2. Make the Spice Paste:

    • Blend the garlic, shallots, red chilies, turmeric, candlenuts, and salt into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant.
    • Add the crushed galangal and kaffir lime leaves to the pan. Continue to sauté until the mixture becomes aromatic.
  4. Add the Ingredients:

    • Stir in the petai and krecek. Cook until the krecek begins to brown slightly.
    • Add the diced tempeh and tofu. Pour in enough water to cover the ingredients.
    • Add the instant coconut milk and stir well.
  5. Season and Simmer:

    • Stir in the granulated sugar and seasoning. Mix thoroughly.
    • Allow the mixture to come to a boil, then reduce the heat to a simmer. Cook gently, stirring occasionally to prevent the coconut milk from curdling.
  6. Final Touches:

    • Taste and adjust the seasoning as needed.
    • Once the dish has reached the desired consistency and is heated through, remove from heat.
  7. Serve:

    • Serve the Lodeh Krecek Tahu Tempe hot with steamed rice or as part of a larger Indonesian meal.
