Hearty Indonesian Beef Soup (Sop Sapi Kangen Rumah)

Ingredients:

For the Soup:

  • 500 grams beef, cut into cubes
  • 2 large carrots, peeled and sliced into rounds
  • 1 large potato, peeled and cut into large cubes
  • 1 pack of green beans (optional)
  • 1 ear of sweet corn, cut into chunks
  • 1 large tomato, chopped
  • 2 stalks green onions, sliced
  • 2 beef bouillon cubes

For the Spice Paste:

  • 7 shallots
  • 4 cloves garlic
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt

Instructions:

  1. Prepare the Beef: Cook the beef in a pot until tender, either by boiling or pressure cooking. Once tender, cut the beef into cubes. Do not discard the cooking liquid, as it will be used for the soup.

  2. Make the Spice Paste: Blend or grind the shallots, garlic, black pepper, and salt into a fine paste.

  3. Prepare the Soup Base: Using the beef cooking liquid, add the prepared spice paste to the pot. Adjust the seasoning to taste.

  4. Add Vegetables: Begin by adding the carrots to the pot. After 3 minutes, add the potatoes. If using green beans, add them next. Follow with the sweet corn. Ensure each vegetable has time to cook properly by allowing a few minutes between adding each type.

  5. Incorporate Beef and Finish: Once the vegetables are nearly tender, add the cubed beef, chopped tomato, and sliced green onions. Adjust the seasoning if necessary. If the soup has a strong vegetable flavor, you can add the beef bouillon cubes to enhance the beefy taste, though this step is optional.

  6. Serve: Enjoy your soup with a side of sambal terasi and hot steamed white rice for a delightful and comforting meal.
