Ingredients:
- 50 grams chicken bones (preferably back bones)
- 200 grams chicken meat
- 5 kaffir lime leaves
- 2 bay leaves

- 3 cm ginger (bruised)
- 2000 ml water

- 15 shallots
- 6 garlic cloves
- 2 tsp coriander seeds
- 3 cm ginger
- 2 candlenuts (toasted)

Boil the chicken bones and meat in water. Discard any scum that rises to the surface. Once the chicken is cooked, remove and shred it.
