Economical Chicken Soto (Indonesian Chicken Soup)

Ingredients:

  • 50 grams chicken bones (preferably back bones)
  • 200 grams chicken meat
  • 5 kaffir lime leaves
  • 2 bay leaves
  • 2 stalks lemongrass (bruised)
  • 1 thumb-sized galangal (bruised)
  • 3 cm ginger (bruised)
  • 2000 ml water

Ground Spices:

  • 15 shallots
  • 6 garlic cloves
  • 2 tsp coriander seeds
  • 3 cm ginger
  • 2 candlenuts (toasted)
  • Salt, to taste
  • White pepper, to taste

Accompaniments:

  • 4 boiled eggs
  • Bean sprouts (blanched, optional)
  • Thinly sliced cabbage
  • Chopped spring onions
  • Fried shallots
  • Rice vermicelli (cooked)
  • Lime wedges

Steps:

  1. Boil the chicken bones and meat in water. Discard any scum that rises to the surface. Once the chicken is cooked, remove and shred it.

  2. Add bruised ginger, galangal, kaffir lime leaves, bay leaves, and lemongrass to the chicken broth. Bring to a boil, then set aside.

  3. In a separate pan, sauté the ground spices with a little oil until fragrant. Remove from heat and add to the chicken bone broth.

  4. Bring the broth back to a boil, incorporating the ground spices. Season with salt and white pepper. Add lime juice to taste, if desired.

  5. Arrange the accompaniments in serving bowls and ladle the hot soup over them. Serve immediately.
