  • 5 shallots
  • 1 teaspoon black pepper

  • 3 kaffir lime leaves
  • 2 bay leaves
  • 2 candlenuts
  • 3 red curly chilies
  • Sugar, to taste
  • Instant chicken stock powder, to taste

Instructions

  1. Prepare the Spice Paste:

    • Blend all the spice paste ingredients (except the kaffir lime leaves and bay leaves) into a smooth paste using a food processor or mortar and pestle.
  2. Cook the Spice Paste:

    • Heat a pan over medium heat and add enough oil to cover the bottom. Once the oil is hot, add the blended spice paste and sauté until it becomes fragrant and the oil starts to separate.
  3. Combine Ingredients:

    • Add the fried eggs and tofu to the pan with the spice paste. Stir gently to coat them evenly with the spices.
