Orak Arik Telur: A Flavorful Indonesian Stir-Fry

Ingredients:

  • 2 large eggs
  • 2 carrots, sliced into matchsticks
  • 10 green beans, sliced on the diagonal
  • 3 shallots, thinly sliced
  • 1 teaspoon black pepper (optional)
  • Salt, to taste
  • 150 ml water
  • Cooking oil, for sautéing

Instructions:

  1. Sauté Shallots: Heat a generous amount of cooking oil in a skillet over medium heat. Add the sliced shallots and sauté until they become fragrant and translucent.

  2. Cook Eggs: Crack the eggs into the skillet with the shallots. Gently scramble the eggs, stirring occasionally. Allow them to cook undisturbed for about 30 seconds, then stir again until the eggs are just set.

  3. Add Carrots: Incorporate the sliced carrots into the skillet. Stir well to combine with the eggs and shallots.

  4. Add Water: Pour in 150 ml of water, and allow it to simmer. Cook until the carrots are just starting to become tender.

  5. Add Green Beans: Introduce the sliced green beans to the skillet. Stir thoroughly to combine all the ingredients.

  6. Season: If desired, add black pepper. Continue cooking for an additional 3 minutes, or until the vegetables are cooked to your liking.

  7. Adjust Seasoning: Season with salt to taste, and adjust any other seasonings as needed.

  8. Serve: Once the vegetables are cooked and the flavors have melded together, remove from heat. Transfer to a serving dish and enjoy!
