Fresh Indonesian Chicken Soup (Sup Ayam Segar)

Ingredients:

  • 2 chicken breasts, cleaned and diced
  • Water, as needed
  • Salt, to taste
  • Granulated sugar, to taste
  • Whole peppercorns, to taste
  • Spring onions, cleaned and sliced to preference
  • Celery, cleaned and sliced to preference
  • 2 stalks lemongrass, cleaned and bruised
  • 3 bay leaves, cleaned
  • 3 kaffir lime leaves, cleaned
  • 1 piece ginger, peeled and bruised
  • Fried Spice Paste:
    • 9 shallots, peeled and cleaned
    • 7 cloves garlic, peeled and cleaned
  • Vegetables:
    • 100g carrots, peeled and sliced to preference
    • 100g cauliflower, separated into florets and cleaned
    • 100g potatoes, peeled, cleaned, and sliced to preference
    • 50g green beans, cleaned with edges trimmed

Instructions:

  1. Prepare the Broth: In a large pot, bring water to a boil. Once boiling, add the chicken breasts and simmer over low heat. After boiling, discard the first boil and cook for the second time.

  2. Prepare the Spice Paste: While waiting for the second boil of the chicken broth, grind the fried spices until wilted with pepper. Lemongrass, daun salam, daun jeruk and ginger. in Believe
