Fresh Indonesian Chicken Soup (Sup Ayam Segar)
Ingredients:
- 2 chicken breasts, cleaned and diced
- Water, as needed
- Salt, to taste
- Granulated sugar, to taste
- Whole peppercorns, to taste
- Spring onions, cleaned and sliced to preference
- Celery, cleaned and sliced to preference
- 2 stalks lemongrass, cleaned and bruised
- 3 bay leaves, cleaned
- 3 kaffir lime leaves, cleaned
- 1 piece ginger, peeled and bruised
- Fried Spice Paste:
- 9 shallots, peeled and cleaned
- 7 cloves garlic, peeled and cleaned
- Vegetables:
- 100g carrots, peeled and sliced to preference
- 100g cauliflower, separated into florets and cleaned
- 100g potatoes, peeled, cleaned, and sliced to preference
- 50g green beans, cleaned with edges trimmed
Instructions:

Prepare the Broth: In a large pot, bring water to a boil. Once boiling, add the chicken breasts and simmer over low heat. After boiling, discard the first boil and cook for the second time.
