Ingredients
- 2 whole gurameh fish (catfish), cleaned and cut into pieces
- For the Spice Paste:
- 3 red shallots
- 4 cloves of garlic
- 2 candlenuts (kemiri)
- 4 curly red chilies (or to taste)
- 2 kaffir lime leaves (a substitute for ginger to remove the fishy smell)
- 400 ml coconut milk (from half a coconut)
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- Cooking oil (for frying)
Instructions
-
Prepare the Fish:
- Clean the gurameh fish thoroughly and cut into pieces. Lightly fry the fish pieces in hot oil until golden brown, taking care not to over-fry them. The fish should be cooked but still tender.
-
Make the Spice Paste:
- In a blender or food processor, blend the red shallots, garlic, candlenuts, and red chilies into a smooth paste. Set aside.
-
Cook the Spice Paste:
- Heat a little cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste. Add the kaffir lime leaves to the pan and cook for an additional minute.
-
Add Coconut Milk:
- Pour the coconut milk into the pan with the sautéed spice paste. Stir well to combine and bring to a gentle simmer.
-
Season the Stew:
- Add the granulated sugar, salt, and ground black pepper. Adjust the seasoning according to your taste preferences. Let the mixture simmer gently.
-
Combine and Simmer:
- Once the coconut milk mixture is simmering, add the fried fish pieces. Allow the stew to cook gently until the fish is fully cooked and the flavors meld together, about 5-10 minutes.
-
Serve:
- Serve the Gurameh Kuah Kuning hot, with steamed rice for a complete and satisfying meal.
Enjoy this flavorful Indonesian stew that combines the richness of coconut milk with the aromatic spices of the spice paste, creating a delicious dish that is both comforting and aromatic.
